Chocolate Cashew Cookie Larabar Pops
It’s one of my favorite parts about blogging that I can share with you my favorite flavors. I’ve shared my favorite flavor combinations with you on this blog, including peanut butter basil, banana choc chip, sweet and spicy sriracha sauce, and now cranberry cashew chocolate.
Recently, I was at work and had a random break for lunch. I found out about the deliciousness of chocolate and cashews with cranberries.
I had packed some dried cranberries, dark chocolate chips, and raw cashews to go with my hummus. What was the result? The result was a flavor combination that I wasn’t prepared for.
It was so simple yet so delicious that I had to stop in the middle of my bite, look at my tiny handful and tell my friends they must try it right away. This little recipe was born from that moment.
Larabars are another food I love. When I was a child, my sister introduced me to Larabars and the apple pie flavor. It was a life-changing experience. Since then, recipes on how to replicate them at home have appeared. When I found my latest flavor combination, I knew that I would combine both of my loves into one recipe. That’s what I did.
Ingredients
- 15-20 pitted medjool dates*
- I used half-and-half.
- 1 cup dried cranberries, sweetened or not.
- Half a cup of dairy-free semisweet or dark chocolate chips
Instructions
- Put the cashews into a processor, and pulse until they are in small pieces but not as finely ground as flour. You want some chunks. Pour into a bowl and set it aside.
- Dates can be processed until they are sticky and small pieces have formed.
- Add the chocolate chips, cranberries, and ground cashews back into the mixture. Mix well or pulse the mixture.
- Squeeze a small amount of the mixture to test if it sticks. If the mixture is still crumbly, you can add more dates.
- Then, using your hands to melt the mixture, scoop out 1 Tbsp of the mixture and roll it into small balls. Do not roll the mixture in your hand, but form it into small balls.
- Once chilled, add skewers or Popsicle sticks. Store at room temperature in plastic bag or Tupperware to keep fresh. Once chilled, add skewers or Popsicle stick and store in a plastic bag or Tupperware at room temperature to keep them fresh.
