Peanut Butter and Basil sandwich

Last week, I made spring rolls for dinner. Rice paper is wrapped around carrot and cucumber sticks with peanut sauce for a dip. Oh, and basil. This was the key.

You should know that my husband and I have different tastes. I can, for example, pick up a handful and eat the basil raw with joy. My husband is skeptical about using more than two sprigs of basil in a dish. Sometimes, men and women are so different.

While eating spring rolls that were stuffed with plenty of fresh basil, he started to remove all the leaves and place them on his dish. In a moment of confusion and anger, I asked him, “Are You Going to Eat That?” He replied, “No. It’s Just Too Much.” So, I did what every logical foodie does. I grabbed the prawns with one hand and dipped them into my peanut sauce. Then, in one bite, I ate them. At that moment, I realized that peanut butter and fresh basil were a great combination.

Ingredients

  • Two small wheat baguettes
  • Natural peanut butter (just peanuts, salt, and peanuts) – 1-2 Tbsp
  • Fresh basil, 1/4 cup
  • Honey or agave ( optional )

Instructions

  • The baguette can be lightly toasted (optional). Next, spread the peanut butter on top of the basil and drizzle honey over it (optional). Devour immediately. Fresh is best.
