Superfood Sweet Potato Dessert Fries
Sweet potato fries were my new favorite. I never looked back. Although I do occasionally enjoy traditional fries, I prefer sweet potato fries almost exclusively. What’s there not to like? These are sweet, delicious, crispy, and tender. They go well with any dip.
My love for sweet potato fries went beyond the savory. I dreamed of this huge pile of sweet potato fries smothered in everything sweet. It turned out that this was a great idea. The next girls’ night I host, I already know what I will make.
Dessert fries are not unhealthy. They are packed with five superfoods. I think this is a cause for celebration.
Start with sweet potato fries that have been lightly seasoned in olive oil and sea salt. The sauce is next. Peanut butter lovers rejoice.
You can use almond butter if you don’t like peanut butter. The next time I make them, I will go this route. Sweet potato and almond butter were made to be together. You can’t go wrong with peanut butter.
I melted dairy-free semisweet chips and poured the chocolate on. It’s seriously delicious. You’re missing out if you haven’t tried dark chocolate and sweet potatoes.
Where do these health benefits of superfoods come from? Let me explain.
Nuts- Nuts contain a lot of protein, healthy fats, and fiber. They also have vitamins and arginine, which help lower blood pressure. Nuts can even help you live longer, according to some research. Nuts can also help to lower cholesterol, stabilize blood sugar, and fight dementia.
Sweet Potatoes- Beautiful sweet potatoes have a lot of nutritional value. Sweet potatoes are high in vitamin C, vitamin B6, iron, and magnesium. Vitamin D is also present. Carotenoids, such as beta carotene, which boosts the immune system and strengthens eyesight, are also abundant in them.
Coconut- Coconuts are high in saturated fat but also contain medium-chain triglycerides. These are metabolized by the body differently than long-chain fatty acids, such as those found in animal products and high-fat foods. Coconuts also contain a lot of fiber, vitamin C, E, and B vitamins, as well as iron and selenium.
Pomegranate Pomegranates contain a high amount of potassium, folic acids, and iron. The anti-inflammatory properties of pomegranate juice may prevent cancer.
Dark Chocolate- It has been found that dark chocolate may help lower blood pressure and reduce stroke risk. Dark chocolate contains antioxidants and fiber, which can help to prevent cancer. It also protects the skin from UV damage. Regular consumption of dark chocolate can improve your mood, blood flow, and even your vision.
It is best eaten immediately! Once cooled, it’s not as tasty and won’t last long. Invite some friends over to share these. If you want to make it for one person, then reduce the amount of ingredients. I recommend about one sweet potato. Enjoy!
Ingredients
- 5-6 sweet potatoes washed and scrubbed
- 2-3 Tbsp olive oil
- 1 tsp of sea salt
- Natural Salted Peanut Butter (creamy, crunchy or almond butter)
- 1/4 cup dairy-free bittersweet chocolate chips
- 14 cup Coconut Whipped Cream
- 1/4 cup pomegranate arils
- Topping: 2 Tbsp of roasted mixed nuts
- Ground cinnamon ( optional for toppings)
Instructions
- Preheat oven to 450 degrees F (223 C).
- Slice sweet potatoes into equal wedges. Halve, halve again, and then cut off the pointed wedge to make a small “fry.” Cut the remaining wedge in two if it seems too large. Continue to slice the fries until they are all sliced.
- Spread fries on 2-3 baking sheets and sprinkle with a generous amount of olive oil and salt. You want to arrange them in one layer. Do not overlap or touch too closely, or they will not brown.
- Flip the pan to ensure even cooking. Continue baking for 10-15 minutes more until the desired golden brown color is achieved.
- Remove from the oven and sprinkle with some more cinnamon and salt (optional). Let cool for a couple of minutes.
- Pour the peanut butter sauce: thin it with hot water to make it pourable. If desired, sweeten with maple or agave syrup (I kept mine plain). No need to thin peanut butter if it’s already soft. Add it just as it is.
- Microwave chocolate chips for 30-second increments to melt. You can also melt the chocolate in a double boiler. If desired, add a little coconut oil to make the mixture more pourable.
- Place fries on a platter and drizzle the chocolate and peanut butter over them. Add coconut whipped crème, pomegranate seeds, and nuts. Sprinkle with cinnamon. Serve immediately.
