Peppermint Mocha with Coconut Milk

I was a mint-chocolate detester. I was opposed to anything that contained this flavor combination, particularly desserts. Thank you, but I don’t want any peppermint patties. Then, something happened. It’s hard to say if the Andes Mint won me over or the many times I watched my boss’s husband enjoy a mint-chocolate chip shake while looking utterly content, or even the time when I was in a pinch for ice cream. My aunt only had a mint chip on hand, and I enjoyed it just a bit, but I didn’t want anyone to know. Yes, it’s true. Mint, chocolate, and I have become best friends. Lianne la Havas and winged eyeliner. Since giving it another chance on a random Braum trip this summer, I get one scoop each of coffee chocolate chunks and mint chocolate chip, and then I am on my way.

This cold coffee drink is a real treat and so easy to prepare! Coconuicecubescecubes provide a simple, creamy base. Strong brewed coffee (ours is homemade) adds a morning kick, while creamy chocolate syrup, cocoa powder, and peppermint oil give it a minty touch. This frappe is my favorite: It’s cool, creamy, chocolaty, minty, and has plenty of caffeine. What else would I add? Oh, yeah! Whipping cream and fresh mint. Let your wild side out. After all, it’s the holidays.

It would be a great breakfast, afternoon snack, or dessert. Add a shot or two of Kahlua, Bailey’s, or other liquors for an extra kick. You can’t really go wrong with any way of serving it.

Ingredients

  • Strong brewed coffee (1 cup) (French press or cold brew works best).
  • Eight cubes of coconut milk (or any other milk*)
  • 1/4 scant tsp natural peppermint extract*
  • Light chocolate syrup, 2 Tbsp
  • Cocoa powder, 1 Tbsp

Instructions

  • Prepare your coffee the night before and place it in the refrigerator so that it is cold the next morning. Pour your coconut milk or any other milk ice cube tray. You’ll need 8-10. Cover with plastic wrap, and freeze.
  • Add all ingredients in the morning to a Blender. Mix until well combined. If needed, add an extra cube of milk ice. Adjust flavors to taste.
  • You can serve immediately or freeze for later. Top with whipped cream, chocolate sauce, and fresh mint.
